🛒Ingredients

  • 3 cups Long grain rice(Rinsed)
  • 4 large Tomatoes(Blended)
  • 2 Red bell peppers(Blended)
  • 2 large Onions(Diced)
  • 3 tbsp Tomato paste
  • 1/2 cup Vegetable oil
  • 4 cups Chicken or beef stock
  • 1 tbsp Curry powder
  • 1 tsp Thyme(Dried)
  • 2 Bay leaves

👨‍🍳Instructions

    Heat oil in a large pot and fry the diced onions until translucent

    Add tomato paste and fry for 3-5 minutes until the oil separates

    Pour in the blended tomato and pepper mixture, cook for 15 minutes

    Add curry powder, thyme, and bay leaves. Season with salt

  5. 5

    Add the stock and bring to a boil

  6. 6

    Stir in the rice, reduce heat, cover and cook for 30-35 minutes

    Check occasionally and add water if needed. Rice should be tender and fluffy
